Super Fast Easy Healthy Minestrone Soup

Recipe for one-lunch-portion super FAST easy, tasty & healthy Minestrone Soup, right here:

Ingredients:

(Section A)

15g Carrot

15g Cabbage

15g White Onion

15g Brinjal / Aubergine

15g Corn Kernels

15g White Button Mushroom

40g Tomato

15g Bacon (omit for vegetarian version)

(Section B)

2/3 teaspoon Olive Oil

(Section C)

160ml Water

15g Small Pasta (Alphabet Pasta or Shell Pasta)

1 tablespoon Ketchup / Tomato Sauce

1 teaspoon Soup Base Powder (use Chicken Stock / Vegetarian Stock)

Salt & Pepper – to taste

1 Pinch Italian Dry Herbs (optional)

Easy 1-2-3-4-5 Cooking Steps:

  1. Pour boiling water into the Lunch Soup Jar until the maximum mark and close the lid. This is to preheat the Lunch Soup Jar to prepare it for cooking.
  2. Cut all vegetables in Section A into 1cm cube sizes.
  3. Add Olive Oil into a medium heat pot, next add the vegetables (+ bacon for non-vegetarian version) and Italian herbs. Stir-fry for 2 minutes.
  4. Add all items in Section C and bring to a boil. Continue to boil for 3 minutes. Season to taste.
  5. Pour out the hot water from the Lunch Soup Jar. Pour in the boiled soup from #4. Close the lid of the Lunch Soup Jar. Delicious Minestrone Soup is served in 1 hour!

A very simple one-pot meal with super healthy ingredients. The fibre in the vegetables and carbohydrates from the pasta will fill you up and keep you energised to go for the rest of the day! Pair with some small sandwiches if you want a larger meal!
